Venison Chili

2-3 lbs. ground venison
1 yellow onion, finely diced
1 celery stalk, finely diced
1 T. bacon fat (or cooking oil)
1 can-10 oz. Ro-Tel chipotle diced tomatoes (with green chilies and chipotle peppers)
1 can-15 oz. tomato sauce
14 oz. beef broth
1 T. ground chipotle chili powder
2 T. hot Mexican chili powder
1 t. garlic powder
½ t. salt
½ t. ground black pepper
1 t, chicken bouillon powder
1 T. cumin, halved
2 T. regular chili powder
1 t. smoked paprika
1 can dark beer (optional)
1 can Ranch beans (optional)
½ oz. of morel mushrooms (about 15), cut into large portions
